I have an overabundance of beets. I love beets and I didn't think I would have any trouble using up this bag I got in my winter farm share, but I still have lots left. I have a freezer full of puree for making my chocolate beet cake, and I have been boiling them and eating them buttered and also chopped in salads. I am looking for something different. Do you have a great beet recipe you could share? Thanks.

Pickled Beets

Remove the stems of the beets. Boil them whole in water until they are fork-tender. Dump them into a strainer and rinse with cold water. Once they are cool enough to handle, the skins should slip off easily just by rubbing them. Cut the beets up into chunks and put into a mason jar or something similar.

The marinade is simple. You make enough to cover the beets, so there aren't exact measurements. You will want to use a 50/50 ratio of sugar and vinegar (ex. 1 cup sugar and 1 cup vinegar). Bring the mixture to a simmer stirring frequently until the sugar is disolved. Season the marinade while simmering with mustard seed (I would say about 1/2 a tbls. per 2 cups of marinade. More or less to taste). Let simmer for another 1-2 minutes. Pour the marinade into the jars to coat the beets. At this time, I add a generous pinch of pickling spice to the top of the jar. Close the lid and refridgerate until cold.

I love to eat these straight from the jar or as a side to a sandwich at lunch.

Beet and Blu Cheese Salad

Boil, peel, and slice the beets. Put them in the fridge to get cold. Once they are cold, put them on a dish and top with some arugula and/or spinach, sliced tomatoes, blu cheese crumbles, and chopped walnuts. Top with a balsamic vinegerette.

I love beets! Grandma use to grow them in her garden. She would make us Borscht (Russian Beet Soup). 2 cups of low sodium beef stock 2 cups finely diced beets 4 carrots diced 1 big onion diced 2 tbl butter 1 cup shredded cabbage, bagged or fresh 1 tsp lemon juice Sour cream or Greek yogurt Cook beets, carrots, and onion in 2 cups boiling salted water. Add butter, beef stock, and cabbage. Cook until hot and cabbage is tender. Add the lemon juice at end. Garnish with a spoonful of sour cream at the end.

Do you own a juicer? We don't care much for beets so we juice them with other fruits and veggies instead. Beets and Pineapple make a yummy combo. You can also make your own V8 juice by juicing together a beet, 3 tomatoes, 2 carrots, 3 celery stalks, 2 bell peppers, a cup of spinach, a clove of garlic, and a teaspoon of lemon juice. I've also used a recipe for juiced beets as a marinade for steak or pork chops: 1/2 cup beet juice, 1 cup orange juice, 3 T red wine vinegar, 1/2 cup chopped onion, 3 T brown sugar and 1t salt (marinate for 30 min-1 hour and grill/bake your meat how you'd like).

I dont have a recipe but have fond memories of my mom making pickled beets. This was the only way that I would eat them.

Beet gnocchi!! There are lots of recipes on line... We've made one with ricotta cheese - yummy!

Gail, My friend at work uses beets to make food coloring because she reacts to artificial food coloring. She used beets the other day to make pink frosting for valentine cookies. I'll have to ask her which vegetables she uses for other colors. I'll post when I find out.
