Pot Roast

My BIL has been out of the country for some time and just got back.
I want to make him pot roast for dinner this coming week, but I
don't have one great recipe. What's your best pot roast recipe?

This is the BEST recipe ever....
1 (4-5 lbs) beef roast, any kind
1 package brown gravy mix, dry
1 package Italian salad dressing mix, dry
1 package ranch dressing mix, dry 1/2 C water
Potatoes and Carrots
Place beef roast in crock pot
Mix the dried mixes together and sprinkle over the roast
Pour the water around the roast
During the last 3 hours, add potatoes and carrots.
Cook on low for 7-9 hours

I just put mine in a roaster with salt and pepper on top. I fill
the roasting pan with some water --- maybe 1/4". Then I add
carrots, cover and cook it at 325 degrees for around 3 or 4 hours
(depending on the size of the roast). I use the juice from the
potroast to make gravy and serve mashed potatoes with it. Yum!

I start by sprinkling a bit of flour on the roast. I put in in a
frying pan with a bit of canola oil just to sear the outside to
lock in in the flavor (not cook it all the way). In the bottom of
the crockpot add 3 peeled and quartered russet potatoes, 2 peeled
carrots cut into larger bit sized pieces, 2 celery cut into large
bite sized pieces, 1 diced onion (or frozen pearl), and 1 package
of fresh whole mushrooms. Place roast on top of vegetables. I pour
over either 1 beef bullion and 1 cup of water or just use beef
broth and add pepper and 1 bay leaf (remember to take out). I cook
it on low for 8/10 hours depending on the size of roast. I like to
have a little extra gravy on the side so I use a beef packet gray.
You can make it from the juices and thicken it, but I find it kind
of greasy. I would also serve some bread or dinner rolls. I find
people like to soak up their juices with it.

Thanks guys! I took a few tips from each of your recipes, and it
came out great! Now I have to write down exactly what I did so I
remember it next time!

I sear the roast with Gravy Master and throw in the crockpot with
celery, carrots, onions and potatoes. You can add an extra cup of
water and a beed boullion cube if you'd like. Shouldn't need much
more salt but could add pepper and a little rosemary if you like.
Delicious!
There's also an alternative recipe where you add a can of cream of
mushroom soup and a packet of onion soup mix to it all and it makes
a creamy gravy over everything. Super good too:)
