Like I just replied to your asparagus question, roasted! If they
are large I cut them in half. Salt, pepper olive oil. 400 degree
oven for 10-15 min. I like to put them cut side down, so they get
caramelized. Yum!

Oh, and when it is nice out, they are prepared the same way. Then
cooked on the grill!

I agree brussel sprouts are great in the oven, they get a yummy
egg roll flavor.
The most important thing is don't overcook them, especially when
boiling. I think that's why most kids don't like it, because of
that strong ripe diaper smell.

Oh I forgot what I going to say.
I add olive oil, onion powder, salt and pepper. I quarter the
brussel sprouts and then cook them on a nonstick silpat until
tender (15 min or so). Right after I pull them out of the oven I
sprinkle some high quality parmesan cheese over top.

I LOVE these. I used to dislike them, but my whole family really
enjoys them now.
I like to steam them, but I agree with pp, don't overcook. I also
like to pair them with other dark green veggies like green beans.
For some reason, they are really good together. I often put
putter and apple cider vinegar on them. The vinegar is supposed
to reduce later gas levels:)
Lastnight I was inspired by my brussells sprouts. I steamed them.
Then, I made a quick sauce with butter, apple cider vinegar,
honey, and cinnamon. I cooked some chopped apples and raisins in
that for a couple minutes, then mixed in the brussells sprouts.
Wow, it was so good. Everyone asked for seconds.

I don't think I've ever cooked brussell sprouts before, because of
the smell I guess. But with these recipes maybe I'll try them,
sounds like they should be good.

I tried them 2 ways. The first time I made them, I shreaded them
and put them in a pan with minced garlic, minced onion, and oil. I
had them on medium heat for about 10 minutes and they were not
tender at all. I added some balsamic vinegarette and seasoned them
with salt and pepper. I followed a recipe I found, but they just
weren't good. They never got soft even though I kept them over
medium heat for about 20 minutes. They were so bitter.
The second day I roasted them in the oven. I halved them and put
them cut side down like a PP suggested. I put some olive oil on
them and garlic salt and pepper. They were much better this way,
but they still had a bitter after taste.
My question is, are they supposed to be yellow in the middle?
That was the part that seemed so bitter. I like the outer layers
quite a bit (although my husband and kids didn't), but that
middle part stayed hard and was no good. Did I get a bad batch of
them? Or are they always like this in the middle?
Thanks!

If they were still bitter then there could be a couple reasons. The
first recipe seemed to need some liquid, imo. The second, perhaps
you didn't cook them for long enough. That being said, brussels
sprouts get more sweet/less bitter if they are left out in a frost
before harvesting. Perhaps this didn't occur and they were not a
ready to eat as others.
You can think of them like little tiny cabbages. That helps me
connect cooking them with something I know in my head. Steaming
or boiling ensures a more even result. I haven't had bitter
sprouts in a long time. Keep trying, I'm sure you'll figure it
out. Otherwise, I'll let you know when I'm making them next and
you can stop by for a sample:)
