Breakfast
Strata
2 cups cubed leftover bread
1 1/2 cups grated cheese (I use cheddar)
1 1/2 cups diced or thinly sliced ham strips
1/2 cup chopped onion
10 eggs
2 cups milk
1/2 tsp. each dried mustard, garlic powder and salt & pepper
to taste
1/4 lb. (1 stick) butter melted
1 cup crushed potato chips
Lightly grease one 9x13" baking dish. Place the cubed bread on
the bottom. Sprinkle with the ham, cheese and onion. In a
separate bowl, beat together eggs, milk and seasonings. Pour
mixture into plan covering all the bread, ham and cheese. Cover
and refrigerate overnight. Before baking pour melted butter over
all and top with crushed potato chips. Bake uncovered in 350
degree oven for 50-60 minutes. Let stand 10 minutes before
serving.
Night Before
French Toast
1 10-oz. long loaf French bread, cut into 1" thick slices
8 eggs
3 cups milk
6 tbsp. sugar
3/4 tsp. salt
1 tsp. vanilla extract
6 tbsp. butter
Cinnamon to taste
Arrange bread in well-buttered 9x13" pan. Combine next 5
ingredients in a bowl, mising well. Pour over bread. Chill
covered, 4-36 hours.
Dot with butter and sprinkle with cinnamon. Bake 350 degrees 45
minutes. Serve with syrup, honey, fruit flavored yogurt or sour
cream and fresh fruit.
Sticky
Buns (prepare night before)
1/2 to 1 cup chopped pecans
24 rolls - frozen Rhodes "Dinner" rolls
1 package butterscotch pudding mix (not instant)
1 stick butter
1/2 cup brown sugar
1-2 tsp. cinnamon
Butter Bundt pan; sprinkle chopped pecans in bottom of pan. Place
12 rolls around pan; sprinkle with 1/2 of pudding mix. Place
remaining 12 rolls in pan and sprinkle with rest of pudding. In
sauce pan melt butter, brown sugar and cinnamon. Stir to blend
and pour over rolls; cover with wax paper; place 2 dish towels
for weight over top. Let rise overnight (I usually put together
around 10 or 11pm). Next morning pat down rolls even with the top
of Bundt pan. Place on cookie sheet and bake 30 minutes. Turn out
onto heat-proof dish immediately and serve.

3/4 cup biscuit baking mix
1/4 cup butter, softened

1 (10 ounce) package chopped frozen
broccoli, thawed and drained well
1 cup cubed cooked ham
8 ounces shredded Cheddar cheese

Preheat oven to 375, Lightly grease a 10 inch quiche
dish.

In a large bowl, beat together milk, eggs, baking mix,
butter and parmesan cheese. Batter will be lumpy. Stir in
broccoli, ham and Cheddar cheese. Pour into prepared
quiche dish.

Bake in preheated oven for 50 minutes, or until eggs are
set and top is golden brown.

I double the recipe and pour into a 13 x 9 baking dish and eat if
for a few days. My husband doesn't eat eggs but my son and I love
it!

I absolutely love quiche! Thanks for posting the recipe --- I'm
going to have to try that one!
Here's another recipe that I found but haven't tried yet (but I
think my family will like it):
Healthified
Monkey Bread
1/4 cup sugar
2 tsp. ground cinnamon
2 cans (16.3 oz. each) Pillsbury Grands! Homestyle refrigerated
reduced-fat buttermilk biscuits
1/2 cup chopped pecans or walnuts
3/4 cup fat-free caramel topping
2 tsp. vanilla
Heat oven to 350 degrees. Spray 12-cup fluted tube cake pan with
cooking spray. In a 1-gallon resealable food-storage plastic bag,
mix sugar and cinnamon. Separate both cans of dough ino 16
biscuits. Cut each biscuit into quarters. Add biscuit pieces to
sugar mixture. Seal bag; shake to coat. Layer biscuit pieces and
pecans in pan.
In small bowl, mix caramel topping and vanilla. Pour over biscuit
pieces.
Bake 40-45 minutes or until golden brown and no longer doughy in
center. Cool in pan 10 minutes. Invert onto serving plate. Serve
warm.
Note: if your pan is
like mine (removable bottom) you may want to use a shield
underneath in case the caramel oozes, or place a cookie sheet
underneath.

Sausage and Egg Casserole
1 lb. hot bulk sausage, cumbled (like Jimmy Dean)
8-10 slices bread, cubed
1 cup grated SHARP or X-SHARP cheddar cheese
6 eggs (a couple more if you like –hah!)
1 tsp. salt
1 tsp dry mustard
2 cups milk
Brown sausage and drain. In a greased 9x13 pan, layer ½ bread
cubes, ½ sausage and ½ cheese. Repeat. Beat eggs, salt, mustard
and milk. Pour over bread, sausage, and cheese layers. Bake in a
preheated 350º oven 45 minutes.
*This can be assembled, covered and left overnight and cooked the
next morning. Servings: 8 (at least).

Blueberry
Kuchen
1 cup plus 2 tbsp. flour, divided
1/8 tsp. salt
2 tbsp. plus 2/3 cup sugar, divided
½ cup butter, slightly softened
1 tbsp. white vinegar
5 cups blueberries, divided
1/8 tsp. cinnamon
In medium bowl mix 1 cup flour, salt and 2 tbsp. sugar. Cut in
butter until particles resemble coarse crumbs. Sprinkle with
vinegar. Shape into dough and with lightly floured fingers, press
into loose-bottom 9 inch layer cake pan; about ¼ inch thick on
bottom, less thick and 1 inch high around sides. Add 3 cups
blueberries. Mix remaining 2 tbsp. flour with remaining 2/3 cup
of sugar and cinnamon. Sprinkle over berries.
Bake on lowest rack in 400° oven 59-60 minutes or until crust is
browned and filling bubbles. Remove from oven to rack. Sprinkle
with remaining 2 cups berries. Cool, remove rim of pan. 8
servings.

Frittata
Makes: 4 servings; Start to Finish: 30 mins
1/3 cup dried orzo
2 medium red, yellow and/or orange sweet peppers, chopped
2 tablespoons olive oil
8 eggs
1/4 cup milk
1/2 cup chopped pitted kalamata olives
1/4 cup basil, chopped
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons shredded Parmesan cheese
Preheat broiler. In a large saucepan, cook orzo in 4 cups boiling
lightly salted water according to package directions; drain.
Meanwhile, in a large oven-going skillet cook chopped peppers in
hot oil over medium-high heat until tender. Stir in orzo.
In a large bowl beat together eggs and milk. Stir in olives,
basil, salt, and pepper. Pour over vegetable mixture in skillet.
Cook over medium heat. As mixture sets, run a spatula around the
skillet edge, lifting egg mixture so uncooked portion flows
underneath. Continue cooking and lifting edges until egg mixture
is almost set. Reduce heat as necessary to prevent overcooking.
Broil 4 to 5 inches from heat for 3 minutes or until top is set.
Sprinkle with cheese. Cover and let stand 5 minutes. Cut into
wedges to serve. Makes 4 servings.

Scrambled Egg
Muffins
1/2 pound bulk pork sausage
12 eggs
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/2 cup shredded cheddar cheese
In a skillet brown the sausage; drain. In a bowl, beat the eggs.
Add onion, green pepper, salt, pepper & garlic powder. Stir in
sausage and cheese. Spoon by 1/3 cupfuls into greased muffin cups.
Bake at 350 for 20-25 minutes or until a knife inserted near the
center comes out clean. Yield: 1 dozen.

These recipes are great if you have overnight guests - you can
prepare them the night before.
Night Before Baked Eggs
12 eggs
12 slices white bread
4 cups mik
2 cups shredded cheese
1/4 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. pepper
Optional (add one of
the following):
1/2 lb. cooked, cut up sausage
1/2 lbs. cooked, crumbled bacon
1/2 lb. cubed or cooked ham
Night before: spray a 9x13 inch glass or metal pan. Cut up bread
into cubes. Put in pan. In a separate bowl, beat eggs with a whisk
until well beaten. Add to eggs milk, cheese, mustardd, salt and
pepper. Pour orefr bread. Cover with foil or plastic wrap and
refrigerate overnight. Uncover and bake at 375 for 45-60 minutes.
Serve.
Brunch
Casserole
8 slices bread (torn into bite-size pieces)
3/4 cup melted butter
2 cups sharp shredded cheddar
2 cups chopped cooked broccoli
2 cups ham (bite-size pieces)
4 eggs
2 cups milk
1 tsp. salt
1/2 tsp pepper
In a large bowl, toss bread pieces with melted butter. In bottom
of greased 13x9" baking dish, layer 1/2 bread, 1/2 cheese, 1/2
broccoli and all the ham. Top with remaining broccoli, cheese and
bread. Set aside. In mixing bowl, beat together eggs, milk, salt
and pepper. Pour mixture over top of casserole. Refrigerate at
least 2 hours or overnight. Bake, uncovered, at 350 degrees for
60 minutes or until bubbly.
