Has anyone ever done a yeast bread or roll in the crockpot? I'm thinking that it would be awesome to do a cinnamon roll in the crockpot - esp if you could set it up the night before and have hot fresh yummy-ness in the morning.

Crockpot Jambalaya - Recipe #2

1 lb. boneless chicken thighs, cut up, or 3 links chicken sausage cut up
3 cups water
6 oz. okra
5 dashes tabasco sauce
1 tbsp. red pepper
1/2 lime (squeeze into mixture)
3 stalks celery, chopped
1 green pepper, chopped
2 onions, chopped
3 cloves garlic
28 oz. can crushed tomatoes (don't drain)
1 tbsp. sugar
1/2 tsp. oregano leaves
1/2 tsp. basil leaves
1 cup brown rice
1 lb. fully cooked shrimp, thawed

Combine all ingredients except shrimp in slow cooker. cook on low 7-9 hours until chicken is cooked thru. Add cooked rice at the end.

I got this recipe from the Sam's Club magazine; I can't wait to try it!

Healthy Apple Butter

4 pounds apples, peeled, cored and diced
3/4 cup apple juice
1 teaspoon cinnamon, more to taste
1/2 tsp. nutmeg, more to taste

Place apples in a blender or food processor with apple juice and blend until applesauce consistency. Transfer to a slow cooker. Cook on low 4 to 5 hours, stirring occasionally. Let apple mixture cool and stir in spices. Add more cinnamon or nutmeg to taste. Store in the refrigerator after cooling to room temperature or can to enjoy at a later date.

CrockPot Chicken Tortilla Soup

Ingredients
2 chicken boneless skinless chicken breasts
2 cans Ro-Tel (I like the lime & cilantro, but the regular is fine)
1 can black beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 can corn
1 onion, chopped
2 cans low-sodium chicken broth
1-2 cups of water
1 Tbsp garlic powder*
1 Tbsp chile powder*
1 Tbsp ground cumin*
1 Tbsp dried cilantro*

tortilla chips
sour cream
shredded cheddar or Mexican blend cheese

*Instead of these spices, you could include a packet of Taco seasoning if you prefer.

Put chopped onion, cans of beans, rotel, corn, chicken broth, water, and spices in CrockPot; stir to mix. Put chicken breasts on top of mixture and make sure they're at least partly submerged in liquid. Cook on high 6-7 hours or low 8-9 hours. Before serving remove the chicken breasts from soup and shred, if needed, (sometimes they'll just fall apart on their own, but sometimes they need some help). Return chicken to CrockPot, stir to combine.

To serve put a few tortilla chips in the bottom of a bowl, ladle soup over tortilla chips, top with shredded cheddar cheese, and a dollop of sour cream, serve with more chips if you like. Enjoy!

Chicken a la King

1 can ( 10 3/4 oz.) condensed cream of chicken soup, undiluted
3 tablespoons all-purpose flour
1/4 teaspoon pepper
Dash cayenne pepper
1 pound boneless skinless chicken breasts, cut into cubes
1 celery rib, chopped
1/2 cup chopped green pepper
1/4 cup chopped onion
1 package (10 ounces) frozen peas, thawed
2 tablespoons diced pimientos, drained
Hot cooked rice

In a slow cooker, combine soup, flour, pepper and cayenne until smooth. Str in chicken, celery, green pepper and onion. Cover and cook on low for 7-8 hours or until meat juices run clear. Stir in peas and pimientos. Cook 30 minutes longer or until heated through. Serve over rice. 6 servings.
